Peanut Butter Cookies

  • 0.5 cup all-purpose flour
  • 0.25 teaspoon baking soda
  • 0.125 teaspoon salt
  • 2 tablespoons unsalted butter, softened
  • 0.25 cup granulated sugar
  • 2 tablespoons packed light brown sugar
  • 0.5 cup creamy peanut butter
  • 1 large egg yolk

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a small bowl, whisk together the flour, baking soda, and salt.
  • In a separate medium bowl, cream the softened butter with both granulated and brown sugars until light and fluffy.
  • Beat in the peanut butter and egg yolk until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll the dough into three individual balls and place them on the prepared baking sheet, then flatten each with a fork to create a crisscross pattern.
  • Bake for 10-12 minutes, or until the edges are golden brown, then let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra touch, sprinkle a pinch of sea salt on top of the cookies before baking. Make sure your butter is at room temperature for easier creaming. Do not overmix the dough to keep the cookies tender.
