Ingredients
  

Chicken

  • 4 large boneless, skinless chicken breasts

Sauce

  • 1/4 cup honey
  • 1/2 cup whole berry cranberry sauce
  • 1 tablespoon Dijon mustard

Ricotta Topping

  • 1 cup ricotta cheese
  • 2 tablespoons fresh parsley, chopped
  • salt and black pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  • In a small bowl, whisk together the honey, cranberry sauce, and Dijon mustard for the sauce.

Assemble and Bake

  • Place the chicken breasts in the prepared baking dish and pour the honey-cranberry sauce evenly over the chicken.
  • Bake for 15-20 minutes, or until the chicken is almost cooked through.
  • While the chicken bakes, mix the ricotta cheese, chopped parsley, salt, and pepper in a separate bowl.
