Pasta Salad

  • 200 g High protein pasta
  • 200 g Chicken breast cooked and shredded
  • 1 cup Cherry tomatoes halved
  • 0.5 cup Cucumber diced
  • 0.5 cup Bell pepper diced
  • 0.25 cup Red onion finely chopped
  • 50 g Feta cheese crumbled

Preparation

  • Cook the high protein pasta according to package directions, then drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, cucumber, bell pepper, red onion, and crumbled feta cheese.
  • Toss all ingredients together gently until well combined and serve immediately or chill for later.

Notes

For added flavor, you can dress the salad with a light vinaigrette or a squeeze of lemon juice. This salad is also great for meal prepping!
