Ingredients
  

Broth Base

  • 6 cups vegetable broth
  • 2 inches fresh ginger sliced
  • 4 garlic cloves smashed
  • 1 lemon grass stalk, bruised

Flavor Enhancers

  • 1/4 cup white miso paste or to taste
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar
  • 2 tbsp lemon juice freshly squeezed

Optional Add-ins

  • 2 scallions chopped for garnish
  • 1/4 cup cilantro fresh, chopped
  • 1/2 tsp chili flakes or to taste

Instructions
 

Prepare the Broth

  • Combine vegetable broth, sliced ginger, smashed garlic, and bruised lemongrass in a large pot.
  • Bring the mixture to a simmer over medium heat; then reduce heat to low, cover, and let it gently simmer for 20-25 minutes to infuse the flavors.

Finish the Broth

  • Remove the pot from the heat and strain the broth to discard the ginger, garlic, and lemongrass.
  • Whisk in the miso paste, soy sauce (or tamari), rice vinegar, and fresh lemon juice until well combined.
  • Taste and adjust seasonings as needed, adding more miso or soy sauce if desired.

Serve

  • Serve the hot broth in bowls, garnished with chopped scallions, fresh cilantro, and chili flakes if using.

Notes

For an extra nutrient boost, add some leafy greens like spinach or kale during the last few minutes of simmering. Adjust the amount of miso paste according to your preference for a richer or lighter flavor. This broth can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop. It's a wonderful base for other soups or a comforting drink on its own.
