  • 1.5 lbs ground turkey
  • 2 medium sweet potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 large bell pepper any color, chopped
  • 0.5 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tbsp olive oil

Seasoning

  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper or to taste
  • 2 tbsp fresh parsley chopped, for garnish (optional)

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook until softened, about 3-4 minutes.
  • Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  • Stir in the minced garlic and chopped bell pepper, cooking for another 3-5 minutes until the bell pepper starts to soften.

Cooking

  • Add the diced sweet potatoes to the skillet along with chili powder, cumin, paprika, dried oregano, salt, and black pepper. Stir well to combine.
  • Pour in the chicken broth and tomato paste. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes.
  • Cook until the sweet potatoes are tender, stirring occasionally. If the mixture becomes too dry, add a splash more broth.

Serving

  • Remove from heat and garnish with fresh parsley, if desired. Serve hot and enjoy!

Notes

This recipe can be easily scaled up to produce 15 lbs of ground turkey. Simply multiply all ingredient quantities by 10. Consider using larger cooking equipment like a commercial-sized pot or roasting pans for such a large quantity. You may need to cook in batches depending on your equipment. The cooking times might slightly increase for larger volumes. Feel free to adjust the spices to your preference, adding a pinch of cayenne for a kick, or a dash of cinnamon for a warmer flavor profile. This dish is great for meal prep and reheats well. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
