Equipment

  • 8x8 inch baking dish
  • Large mixing bowl
  • Medium mixing bowl
  • Pastry blender or fork

Ingredients

Rhubarb Filling

  • 4 cups rhubarb, chopped
  • 0.75 cup granulated sugar
  • 2 tablespoons all-purpose flour

Crumble Topping

  • 1.5 cups all-purpose flour
  • 0.5 cup packed brown sugar
  • 0.5 cup rolled oats
  • 0.5 cup cold butter, cubed
  • 0.5 teaspoon cinnamon

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
  • In a large bowl, combine the chopped rhubarb with granulated sugar and flour; mix well to coat the rhubarb evenly.

Making the Crumble

  • In a separate medium bowl, combine the flour, brown sugar, rolled oats, and cinnamon for the topping.
  • Cut in the cold, cubed butter using your fingertips or a pastry blender until the mixture resembles coarse crumbs.

Baking

  • Pour the rhubarb mixture into the prepared baking dish, spreading it out evenly.
  • Sprinkle the crumble topping over the rhubarb mixture, ensuring it is distributed well.
  • Bake for 30-40 minutes, or until the topping is golden brown and the rhubarb is tender and bubbly.

Serving

  • Let the crumble cool slightly before serving; it is delicious warm, perhaps with a scoop of vanilla ice cream.

Notes

For best results, use fresh rhubarb. If using frozen, do not thaw it first, but you may need to add a few extra minutes to the baking time. A sprinkle of nutmeg can also enhance the flavor.
