Ingredients
  

Filling

  • 6 cups rhubarb, trimmed and chopped
  • 1 cup granulated sugar

Streusel

  • 1 cup old-fashioned oats
  • 0.5 cup all-purpose flour
  • 0.5 cup cold unsalted butter, cut into cubes

Instructions
 

Prepare the Rhubarb Filling

  • Toss chopped rhubarb and granulated sugar together in a large bowl, then set aside to macerate while you prepare the streusel.

Make the Oat Streusel

  • Combine old-fashioned oats, all-purpose flour, and cold unsalted butter cubes in a medium bowl; mix until streusel forms using your hands or a pastry blender.

Assemble and Bake

  • Transfer the sugared rhubarb to a 2-quart baking dish and sprinkle the oat streusel evenly over the top.
  • Bake at 375°F (190°C) for 35-40 minutes, or until the rhubarb is tender and the topping is golden brown.

Cool and Serve

  • Allow the crisp to cool for at least 15 minutes before serving warm, optionally with a scoop of vanilla ice cream.

Notes

For extra flavor, a pinch of cinnamon or nutmeg can be added to the streusel. This crisp is best served warm with a dollop of whipped cream or vanilla ice cream.
