Preparation

  • Preheat oven to 400°F (200°C). Wash and peel the potatoes, then cut them into wedges or large chunks.
  • In a large bowl, whisk together the olive oil, lemon juice, chicken broth, minced garlic, dried oregano, salt, and black pepper.

Cooking

  • Add the potato wedges to the bowl with the mixture and toss to coat evenly, ensuring all potatoes are well covered.
  • Arrange the potatoes in a single layer on a large baking sheet, making sure not to overcrowd them.
  • Roast for 30 minutes, then flip the potatoes and continue roasting for another 30-40 minutes, until they are golden brown and crispy.

Notes
