Ingredients
  

Pasta

  • 8 oz Fettuccine

Sauce

  • 1 tbsp Olive Oil
  • 3 cloves Garlic minced
  • 1/2 cup Sun-dried Tomatoes packed in oil, drained and sliced
  • 1.5 cups Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 cup Parmesan Cheese grated
  • 3 cups Fresh Spinach
  • Salt to taste
  • Black Pepper to taste

Instructions
 

Cooking Pasta

  • Cook the fettuccine according to package directions, then drain and set aside, reserving 1/2 cup of pasta water.

Preparing Sauce

  • Heat olive oil in a large skillet over medium heat, then add minced garlic and cook until fragrant (about 1 minute).
  • Stir in the sun-dried tomatoes, heavy cream, and chicken broth, bringing the mixture to a gentle simmer.
  • Reduce heat to low and stir in the grated Parmesan cheese until melted and smooth, then season with salt and pepper to taste.

Combining Ingredients

  • Add the fresh spinach to the skillet and cook until it wilts (about 2-3 minutes).
  • Add the cooked fettuccine to the sauce and toss to combine; if the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

Serving

  • Serve immediately, garnished with extra Parmesan cheese if desired.

Notes

For a spicier kick, add red pepper flakes with the garlic. You can also add cooked chicken or shrimp for extra protein.
