  • 2 medium chicken breast
  • 4 cups chicken broth
  • 1 cup cooked rice
  • 0.5 cup heavy cream
  • 1 stalk celery diced
  • 1 medium carrot diced
  • 0.5 medium onion diced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation

  • Dice the chicken breast and all vegetables.
  • Heat olive oil in a large pot over medium heat and sauté the diced celery, carrot, and onion until softened, about 5 minutes.

Cooking the Soup

  • Add chicken breast to the pot and cook until lightly browned.
  • Pour in the chicken broth, bring to a simmer, then reduce heat and cook for 10 minutes until chicken is cooked through.
  • Stir in the cooked rice and heavy cream, heating through for 2-3 minutes, but do not boil.
  • Season with salt and black pepper to taste before serving.

Notes

For an extra touch of flavor, you can add a bay leaf to the broth while simmering and remove it before serving. Fresh herbs like parsley or dill can also be a wonderful garnish.
