  • 2 tbsp lime juice
  • 1 tsp ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 2 tbsp cilantro, chopped

  • Slice the chicken breasts into thin strips or bite-sized pieces and set aside. In a medium bowl, whisk together the coconut milk, lime juice, grated ginger, minced garlic, and soy sauce.

Cooking the Chicken

  • Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil, then add the chicken and cook until lightly browned and cooked through, about 5-7 minutes.

  • Pour the coconut milk mixture over the cooked chicken in the skillet. Bring the sauce to a simmer and cook for another 5-7 minutes, allowing it to thicken slightly and the flavors to meld.
