Rhubarb Dessert

  • 4 cups rhubarb chopped
  • 0.5 cup honey or maple syrup
  • 2 tbsp cornstarch
  • 0.25 cup water
  • 1 cup oats
  • 0.5 cup almond flour
  • 0.25 cup coconut oil melted

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.
  • In a large bowl, combine the chopped rhubarb with honey or maple syrup and mix well. In a small bowl, whisk together cornstarch and water until smooth, then add it to the rhubarb mixture and stir to coat evenly.

Baking

  • For the topping, combine oats, almond flour, and melted coconut oil in a separate bowl. Press half of this mixture into the bottom of the prepared baking dish.
  • Pour the rhubarb mixture over the crust, then sprinkle the remaining oat topping evenly over the rhubarb. Bake for 30 minutes, or until the rhubarb is tender and the topping is golden brown.

Serving

  • Let the dessert cool completely before serving for best results. Serve warm or at room temperature. Optional: Serve with a dollop of Greek yogurt or a drizzle of extra honey.

Notes

For extra flavor, add a pinch of cinnamon or ginger to the rhubarb mixture. You can also substitute part of the rhubarb with other berries like strawberries or raspberries. Adjust sweetness to your preference.
