Main Ingredients

  • 12-14 large white button or cremini mushrooms
  • 8 oz (≈ 225 g) raw shrimp, peeled & deveined
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 Tbsp fresh thyme leaves
  • 2 Tbsp fresh parsley, chopped
  • 1 tsp lemon zest
  • 2 Tbsp dry white wine optional
  • 4 oz (½ cup) cream cheese, softened
  • ¼ cup grated Parmesan
  • ¼ cup panko breadcrumbs
  • 1 Tbsp melted butter
  • Salt & freshly ground black pepper to taste

Lemon-Butter Drizzle

  • 2 Tbsp butter
  • ½ tsp lemon juice optional

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Clean the mushrooms, remove and finely chop the stems, then set the caps aside.

Cooking Shrimp

  • Pat the shrimp dry, then cook them in a hot skillet with 1 Tbsp olive oil, salt, pepper, and minced garlic until pink and opaque.

Notes

For extra flavor, you can deglaze the skillet with additional dry white wine after cooking the shrimp. Adjust seasoning to your preference.
