Ingredients
  

Crostini

  • 1 French baguette
  • 2 Tbsp olive oil

Shrimp

  • 12 oz medium shrimp
  • 1 Tbsp unsalted butter
  • 1 clove garlic
  • 1 tsp fresh lemon juice

Cranberry Cream Cheese

  • 4 oz cream cheese
  • 3 Tbsp cranberry sauce
  • 1 tsp honey optional

Seasoning & Garnish

  • Salt & freshly ground black pepper to taste
  • Microgreens or baby arugula a small handful for garnish

Preparation

  • Preheat the broiler on high and arrange ½-inch thick baguette slices on a baking sheet. Lightly brush both sides of each slice with olive oil, then broil for 1-2 minutes until golden.

Notes

Keep a close eye on the baguette slices while broiling to prevent burning. Adjust honey in the cranberry cream cheese to your sweetness preference. You can prepare the cranberry cream cheese mixture ahead of time and store it in the refrigerator.
