  • 1 lb Large raw shrimp, peeled & deveined (about 450 g)
  • 1 Red bell pepper medium
  • 1 Yellow bell pepper medium
  • 1 Zucchini large (≈ 8 oz)
  • ½ Red onion large
  • 1 cup Cherry tomatoes (≈ 150 g)
  • 3 Tbsp Olive oil
  • 2 Tbsp Fresh lemon juice
  • 3 cloves Garlic, minced
  • 1 tsp Dried oregano
  • ½ tsp Smoked paprika
  • ½ tsp Kosher salt (adjust)
  • ¼ tsp Freshly ground black pepper
  • 2 Tbsp Fresh parsley, chopped
