  • 2 Tbsp Extra-virgin olive oil
  • 4 cloves Garlic, minced
  • 1 medium Red onion, thinly sliced
  • 1 cup Diced canned tomatoes (no-salt)
  • ½ cup Kalamata olives, pitted & halved
  • ¼ cup Sun-dried tomatoes, chopped
  • 1 tsp Dried oregano
  • 1 tsp Ground cumin
  • ½ tsp Smoked paprika
  • ¼ tsp Crushed red pepper flakes
  • ¼ cup Dry white wine or chicken broth
  • ¼ cup Fresh lemon juice (about 2 lemons)
  • ½ cup Crumbled feta cheese for garnish
  • 2 Tbsp Fresh parsley, chopped for garnish
  • Salt & pepper to taste
