  • 1 lb (450 g) Boneless, skinless chicken thighs (or breasts)
  • 2 Tbsp Olive oil
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • 3 Garlic cloves, minced
  • 12 oz (≈ 340 g) Tomatillos, husked and rinsed
  • 1 Fresh jalapeño, seeded (or ½ if you like milder)
  • ½ White onion, quartered
  • ½ cup loosely packed Fresh cilantro leaves
  • ½ cup Low-sodium chicken broth
  • 2 Tbsp Lime juice
  • ¼ cup Crumbled queso fresco or feta optional
  • Extra lime wedges & cilantro stems for garnish

Preparation

  • Pat the chicken dry with paper towels. Season both sides of the chicken with salt and pepper.
