  • 1 cup long-grain white rice uncooked
  • 1 ½ cups canned black beans drained and rinsed
  • 1 lb large shrimp peeled and deveined
  • 4 cloves fresh garlic minced
  • 2 Tbsp lime juice
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • ½ cup diced red bell pepper
  • ½ cup corn kernels fresh or frozen
  • ¼ cup thinly sliced red onion
  • ¼ cup chopped cilantro
  • 2 Tbsp olive oil

Toppings and Garnish

  • 1 whole avocado cubed
  • ¼ cup crumbled Cotija cheese
  • 2 Tbsp sour cream or Greek yogurt
  • Pickled jalapeños optional
  • ¼ cup creamy chipotle mayo
  • Lime wedges for serving

Instructions
 

Rice

  • Rinse 1 cup of rice under cold water before combining it with 2 cups of water, a pinch of salt, and a drizzle of oil in a saucepan.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or follow the package directions.

Notes

For extra flavor, toast the rice lightly in olive oil before adding water. Adjust the spice level of the shrimp by increasing or decreasing the amount of chili powder and chipotle mayo. You can also add other vegetables like bell peppers or zucchini to the shrimp mixture.
