  • 2 Tbsp Extra-virgin olive oil
  • 4 cloves Fresh garlic, minced
  • ¼ tsp Red-pepper flakes optional
  • 12 oz (about 340 g) Large shrimp, peeled & deveined
  • 1 cup (dry) Orzo pasta
  • ½ cup Dry white wine or low-sodium chicken broth
  • 1 ½ cups Water
  • 3 cups Fresh spinach leaves loosely packed
  • 1 tsp Lemon zest
  • 2 Tbsp Fresh lemon juice
  • 2 Tbsp Fresh parsley, chopped
  • Salt to taste
  • Freshly ground black pepper to taste

Preparation

  • Measure out the orzo, thaw the shrimp as needed, and rinse the fresh spinach leaves.

Notes

For extra flavor, lightly toast the orzo in the olive oil before adding liquids. Adjust red pepper flakes to your preference for more or less heat.
