Main Ingredients

  • 1 lb Raw shrimp (peeled and shells) ≈450 g
  • 1 medium Onion, finely diced ≈150 g
  • 1 large Carrot, peeled & diced ≈100 g
  • 2 Tbsp Tomato paste
  • 1 cup Heavy cream 240 ml
  • 2 Tbsp Olive oil
  • ½ cup Dry white wine optional
  • 1 tsp Fresh thyme or ½ tsp dried
  • 1 Bay leaf
  • Salt & freshly cracked black pepper to taste
  • Smoked paprika optional
  • Fresh chives or parsley for garnish
  • 4 cups Cold water

Instructions
 

Shrimp Stock

  • Heat 1 Tbsp olive oil in a large pot over medium heat, then add shrimp shells and sauté for 2-3 minutes until pink and fragrant.
  • If using, add white wine and reduce by half, scraping up any caramelized bits.
  • Pour in 4 cups cold water along with the bay leaf and bring to a boil; then reduce heat and simmer.

Notes

For a richer flavor, consider roasting the shrimp shells briefly before sautéing. Adjust seasoning to taste, especially the salt, after the bisque has simmered and reduced slightly.
