  • 0.5 lb Large raw shrimp, peeled & deveined
  • 1 cup Long-grain white rice
  • 2 cups Low-sodium chicken broth
  • 2 Tbsp Olive oil
  • 1 Tbsp Unsalted butter
  • 0.5 cup Yellow onion, finely diced
  • 3 Garlic cloves, minced
  • 2 Tbsp Cajun seasoning
  • 1 tsp Smoked paprika
  • 0.25 tsp Cayenne pepper optional
  • 1 Tbsp Fresh lemon juice
  • 2 Tbsp Fresh parsley, chopped
  • Salt & freshly ground black pepper to taste

Instructions
 

Preparation

  • Pat the shrimp dry with paper towels.
  • Toss the shrimp with 1 Tbsp of Cajun seasoning, a pinch of salt, and the optional cayenne pepper.

Cooking

  • Place a large skillet over medium-high heat, add olive oil, and let it shimmer.
  • Add the diced onion and cook, stirring occasionally, for 2-3 minutes until translucent. Stir in the minced garlic.

Notes

For extra flavor, let the seasoned shrimp marinate for 15 minutes before cooking. Adjust the cayenne pepper to your spice preference.
