  • 1 tsp fresh thyme chopped

  • Heat olive oil in a large pot or Dutch oven over medium heat, then add the chicken pieces and cook until lightly browned.
  • Stir in the chopped onion and minced garlic, cooking for about 3-5 minutes until the onion is softened and translucent.
  • Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they are tender and have released their liquid.
  • Pour in the chicken broth, bringing the mixture to a simmer, then reduce heat and let it gently simmer for 10-15 minutes or until the chicken is cooked through.
  • Stir in the heavy cream and fresh thyme, then season the soup with salt and black pepper to taste.
  • Heat the soup through for a few more minutes, ensuring it is warmed but not boiling, then serve immediately.

Notes

For extra flavor, you can sauté the chicken and mushrooms in butter instead of olive oil. A sprinkle of fresh parsley or chives before serving adds a nice touch of color and freshness.
