  • 2 lbs chicken breast cooked and shredded
  • 28 oz enchilada sauce
  • 2 cups cheddar cheese shredded
  • 12 count flour tortillas
  • 1 medium onion chopped
  • 2 cloves garlic minced

For Garnish (Optional)

  • 1 cup sour cream
  • 0.25 cup cilantro chopped

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine the shredded chicken, half of the enchilada sauce, half of the shredded cheese, chopped onion, and minced garlic.

Assembly and Baking

  • Warm the tortillas according to package directions, then spoon a portion of the chicken mixture into each tortilla and roll it up.
  • Place the rolled tortillas seam-down in the prepared baking dish and pour the remaining enchilada sauce over them.
  • Sprinkle the remaining cheese over the enchiladas and bake for 20-25 minutes, or until bubbly and the cheese is melted and lightly browned.

Serving

  • Let the enchiladas cool for a few minutes before serving, and garnish with sour cream and cilantro if desired.

Notes

For a spicier kick, add a pinch of chili powder or a dash of hot sauce to the chicken mixture. You can also customize by adding black beans or corn to the filling.
