  • 1.5 lbs Chicken breast boneless, skinless, cut into cubes
  • 1 large Yellow onion chopped
  • 3 cloves Garlic minced
  • 1 inch Ginger grated
  • 2 tbsp Curry powder
  • 1 14.5-oz can Diced tomatoes undrained
  • 1 13.5-oz can Coconut milk full-fat
  • 0.5 cup Chicken broth
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Fresh cilantro chopped, for garnish

  • Sauté the aromatics and chicken. Heat oil in a large pot, then add chopped onion and cook until softened. Stir in minced garlic and grated ginger, cooking for another minute until fragrant, then add chicken cubes and brown on all sides.
  • Build the curry base and simmer. Sprinkle curry powder over the chicken and aromatics, stirring well to coat. Pour in diced tomatoes, coconut milk, and chicken broth, then bring the mixture to a simmer and cook for 20-25 minutes until the chicken is cooked through and the sauce has thickened.
  • Finish and serve. Season the curry with salt and pepper to taste, and stir in fresh cilantro just before serving. Serve hot with rice or naan bread.

Notes

Adjust the amount of curry powder to your preferred spice level. For a creamier curry, you can add a dollop of yogurt or a splash of heavy cream at the end.
