Buttered Lobster Pasta

Ingredients
  

Pasta

  • 200 g Spaghetti or linguine
  • Salt for pasta water

Lobster & Sauce

  • 200 g Cooked lobster meat from 1-2 small lobsters
  • 100 g Unsalted butter
  • 2 cloves Garlic minced
  • 60 ml Dry white wine e.g., Sauvignon Blanc or Pinot Grigio
  • 15 ml Lemon juice
  • 2 tbsp Fresh parsley chopped
  • 0.5 tsp Red pepper flakes optional
  • Black pepper freshly ground

Instructions
 

Cooking Pasta

  • Cook spaghetti in well-salted water according to package directions until al dente, then reserve 1 cup of pasta water and drain.

Preparing Lobster & Sauce

  • Melt butter in a large skillet over medium heat, add minced garlic and red pepper flakes if using, cooking for one minute until fragrant.
  • Pour in white wine and lemon juice, bringing the sauce to a simmer and cooking for 2-3 minutes until slightly reduced.
  • Stir in the cooked lobster meat and warm it through for about 1-2 minutes.
  • Add the cooked pasta to the skillet, tossing to coat in the sauce.
  • Gradually add reserved pasta water as needed to create a glossy sauce that coats the pasta.
  • Finish by stirring in fresh parsley and season with black pepper to taste before serving immediately.

Notes

For extra richness, add a splash of heavy cream to the sauce along with the white wine. Ensure lobster is cooked through but not overcooked, as it can become rubbery quickly.
