  • 4 fillets Cod fillets about 6 oz each
  • 1/2 cup Unsalted butter melted
  • 1/2 cup Breadcrumbs panko recommended
  • 2 tbsp Fresh parsley chopped
  • 1 tbsp Lemon juice
  • 1 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Preparation

  • Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  • Pat the cod fillets dry with paper towels to ensure even cooking and a good crust.

Make the Topping

  • In a medium bowl, combine the melted butter, breadcrumbs, chopped fresh parsley, lemon juice, garlic powder, salt, and black pepper.
  • Stir until all ingredients are well combined and the breadcrumbs are moistened by the butter.

Bake the Cod

  • Place the dried cod fillets in the prepared baking dish in a single layer.
  • Spoon the breadcrumb mixture evenly over the top of each cod fillet, pressing gently to adhere.
  • Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork and the topping is golden brown.

Serving

  • Remove from oven and serve immediately with your favorite side dishes, like roasted vegetables or rice.

Notes

For extra flavor, you can add a pinch of paprika or a dash of hot sauce to the butter mixture. Be careful not to overcook the cod, as it can become dry quickly.
