Ingredients
  

Tomato Soup

  • 2 tbsp butter
  • 1/2 _count onion chopped
  • 2 cloves garlic minced
  • 28 oz canned crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • salt to taste
  • pepper to taste

Grilled Cheese

  • 8 slices bread
  • 4 slices cheddar cheese
  • 2 tbsp butter softened

Instructions
 

Tomato Soup & Grilled Cheese

  • Sauté the chopped onion and minced garlic in butter within a large pot until softened; then, add the canned crushed tomatoes and vegetable broth, bringing the mixture to a simmer.
  • Remove the soup from the heat, blend it until smooth using a blender, then stir in the heavy cream and season with salt and pepper to taste; meanwhile, butter one side of each bread slice and assemble the grilled cheese sandwiches with cheese between the unbuttered sides.
  • Cook the assembled sandwiches in a skillet over medium heat until both sides are golden brown and the cheese is thoroughly melted, then serve immediately alongside the hot tomato soup.

Notes

For an extra kick, add a pinch of red pepper flakes to the soup before blending it.
