Ingredients
  

Filling

  • 3 cups Cooked chicken or beef, shredded
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Sauce

  • 28 oz Enchilada sauce

Assembly

  • 14 count Corn tortillas
  • 2 cups Shredded cheese Cheddar or Monterey Jack
  • 2 tbsp Olive oil

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

Make the Filling

  • Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
  • Stir in minced garlic, chili powder, cumin, salt, and black pepper, cooking for another minute until fragrant.
  • Add the shredded chicken or beef to the skillet and mix well to combine with the seasonings. Remove from heat.

Assemble the Enchiladas

  • Warm the corn tortillas using your preferred method (microwave, oven, or skillet) to make them pliable.
  • Dip each tortilla briefly into the enchilada sauce to coat it lightly.
  • Place a portion of the meat filling down the center of each tortilla, then sprinkle with a small amount of shredded cheese.
  • Roll up each tortilla tightly and place it seam-down in the prepared baking dish.

Bake the Enchiladas

  • Pour the remaining enchilada sauce evenly over the rolled enchiladas in the baking dish.
  • Sprinkle the remaining shredded cheese over the sauce.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.

Serve

  • Let the enchiladas rest for a few minutes before serving. Garnish with your favorite toppings like sour cream, cilantro, or avocado.

Notes

For extra flavor, you can add a can of diced green chilies to the meat filling. Adjust spice levels to your preference by adding more or less chili powder.
