  • 0.5 lb Ground beef 80/20 lean
  • 2 Burger buns
  • 4 American cheese slices
  • 4 Dill pickle slices
  • 0.25 cup Onion finely diced
  • 0.25 cup Iceberg lettuce shredded

Special Sauce

  • 0.5 cup Mayonnaise
  • 2 tbsp Ketchup
  • 1 tbsp Sweet pickle relish
  • 1 tsp Dijon mustard
  • 0.5 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 0.25 tsp Paprika

Special Sauce

  • Combine all Special Sauce ingredients in a small bowl and mix well, then set aside.

Burgers

  • Divide the ground beef into four equal portions and form loose balls, avoiding over-handling.
  • Heat a cast-iron skillet or griddle over high heat until smoking, then lightly toast the burger buns face down.
  • Place two beef balls on the hot surface, smash them thin with a heavy spatula, and season with salt and pepper.
  • Cook for 1-2 minutes until crispy, then flip, immediately add a cheese slice to each patty, and cook for another minute.
  • Repeat the process for the remaining beef balls and cheese.

Assembly

  • Spread special sauce on the bottom bun, layer with lettuce, diced onion, and pickle slices, then add a cheeseburger patty.
  • Place the middle bun on top, add more special sauce, lettuce, onion, pickles, and another cheeseburger patty.
  • Complete the burger with the top bun and serve immediately.

Notes

For an extra smoky flavor, add a pinch of smoked paprika to the special sauce. Ensure your skillet is very hot for the best smash and crisp on the patties.
