Preparation

  • Place eggs in a single layer in a saucepan and cover with cold water by one inch. Bring water to a rolling boil over high heat, then immediately remove from heat, cover, and let stand for 10-12 minutes.
  • Carefully transfer the eggs to a bowl of ice water and let them cool completely for at least 5 minutes, then peel the cooled eggs and cut them in half lengthwise.
  • Gently remove the yolks and place them in a medium bowl, then mash the yolks with a fork until they are smooth and free of lumps.

Assembly

  • Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks, then mix thoroughly until the filling is creamy and well combined.
  • Spoon or pipe the yolk mixture back into the empty egg white halves, then arrange them on a serving platter.
  • Garnish with a sprinkle of paprika before serving.
