Pasta

  • 300 g Spaghetti or similar pasta

Sauce

  • 2 tbsp Olive oil
  • 4 cloves Garlic minced
  • 1/2 cup Sun-dried tomatoes chopped, oil reserved
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 cups Spinach fresh
  • 1/2 tsp Red pepper flakes optional
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Garnish (Optional)

  • Fresh basil chopped
  • Extra Parmesan cheese for serving
  • Grilled chicken sliced
  • Shrimp sautéed

Instructions
 

Preparation

  • Cook the spaghetti according to package directions in salted water until al dente, then drain and set aside, reserving some pasta water.
  • While the pasta cooks, heat olive oil from the sun-dried tomatoes in a large skillet over medium heat.

Sauce

  • Add minced garlic and chopped sun-dried tomatoes to the skillet, cooking for 1-2 minutes until fragrant.
  • Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  • Stir in the grated Parmesan cheese, spinach, red pepper flakes, salt, and pepper, cooking until the spinach wilts slightly.
  • Add the cooked spaghetti to the sauce and toss to coat, adding reserved pasta water if needed to reach desired consistency.

Serving

  • Serve immediately, garnished with fresh basil, extra Parmesan, grilled chicken, or sautéed shrimp if desired.

Notes

For a spicier kick, increase the amount of red pepper flakes. You can also add other vegetables like mushrooms or bell peppers. This recipe is also great with shrimp or grilled chicken a delicious protein boost!
