Ingredients
  

Pretzel Dough

  • 1.5 cups warm water
  • 2.25 teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 4.5 cups all-purpose flour
  • 2 teaspoons salt
  • 2 tablespoons unsalted butter, melted

Baking Soda Bath

  • 10 cups water
  • 0.5 cup baking soda

Topping

  • 1 large egg
  • 2 tablespoons coarse sea salt

Instructions
 

Make the Dough

  • In a large bowl, dissolve yeast and sugar in warm water, then let it sit for 5 minutes until foamy.
  • Add flour, salt, and melted butter to the yeast mixture, mixing until a shaggy dough forms.
  • Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour, or until doubled in size.

Prepare for Baking

  • Preheat your oven to 450°F (230°C) and line two baking sheets with parchment paper.
  • Bring water and baking soda to a boil in a large pot for the pretzel bath.

Shape and Bake

  • Divide the dough into 12 equal pieces and roll each into a 1-inch thick rope.
  • Cut each rope into 1-inch bites and drop them into the boiling baking soda bath for 20-30 seconds.
  • Remove the bites with a slotted spoon, arrange them on the prepared baking sheets, brush with egg wash, and sprinkle with coarse sea salt.
  • Bake for 12-15 minutes until golden brown, then let them cool on a wire rack.

Notes

For an extra golden-brown crust, you can increase the baking soda bath time to 45-60 seconds. These pretzel bites are best served warm with your favorite dipping sauce like cheese sauce or mustard.
