Ingredients
  

Salad

  • 200 g pasta any shape
  • 150 g fresh spinach
  • 2 cups mandarin oranges, canned and drained
  • 0.5 cup red onion, thinly sliced
  • 0.25 cup toasted slivered almonds

Dressing

  • 0.25 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tsp fresh ginger, grated

Instructions
 

Preparation

  • Cook the pasta according to package directions, then drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta, spinach, mandarin oranges, red onion, and toasted almonds.

Dressing

  • Whisk together the rice vinegar, soy sauce, sesame oil, sugar, and grated ginger in a small bowl.
  • Pour the dressing over the salad ingredients and toss gently until everything is well combined.

Serve

  • Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Notes

For extra crunch, you can add some toasted sesame seeds. You can also customize the vegetables by adding shredded carrots or bell peppers.
