  • 2 large chicken breasts cooked and shredded
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Cook the orzo pasta according to package directions, then drain it and set it aside.
  • In a large skillet, heat olive oil over medium heat, then sauté chopped onion until it is softened, about 3-5 minutes.
  • Add minced garlic to the skillet, cooking for another minute until fragrant.
  • In a large mixing bowl, combine the cooked orzo, shredded chicken, sautéed onion and garlic, chicken broth, cream of mushroom soup, sour cream, and 1 cup of shredded cheddar cheese.
  • Season the mixture with salt and black pepper, stirring well to ensure all ingredients are evenly combined.

Baking

  • Pour the chicken and orzo mixture into the prepared baking dish, spreading it evenly.
  • Sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the casserole.
  • Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
  • Remove the casserole from the oven and let it rest for 5-10 minutes before serving.

Notes

For an extra touch of flavor, consider adding a pinch of dried thyme or oregano to the casserole mixture. You can also substitute cream of chicken soup for cream of mushroom soup if preferred.
