For the Chicken Mixture

  • 1 lb ground chicken
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (8 oz) water chestnuts, diced
  • 1 cup mushrooms, diced
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha (optional)

For Serving

  • butter lettuce or iceberg lettuce cups for serving
  • green onions, sliced for garnish
  • sesame seeds for garnish

  • Heat sesame oil in a large skillet or wok over medium-high heat. Add ground chicken and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  • Stir in minced garlic and grated ginger, cooking for about 1 minute until fragrant.
  • Add diced water chestnuts and mushrooms to the skillet, cooking for 3-5 minutes until softened.
  • In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sriracha (if using).
  • Pour the sauce over the chicken mixture and cook for 2-3 minutes, stirring constantly, until the sauce thickens slightly and coats the chicken.
  • Remove from heat. Serve the chicken mixture in lettuce cups, garnished with sliced green onions and sesame seeds.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic and ginger. You can also substitute ground turkey for ground chicken if preferred.
