  • 1 tbsp Olive oil
  • 2 cups Chicken breast cooked and shredded
  • 1 stalk Celery chopped
  • 2 medium Carrots chopped
  • 1 small Onion chopped
  • 2 cloves Garlic minced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 16 oz Gnocchi potato gnocchi
  • 2 cups Spinach fresh
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste

  • Heat olive oil in a large pot or Dutch oven over medium heat. Sauté celery, carrots, and onion until softened, about 5-7 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth and bring to a simmer. Add gnocchi and cook according to package directions, usually 2-3 minutes, until they float to the top.
  • Stir in shredded chicken, heavy cream, and spinach; cook until spinach wilts, just a few minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes

For extra flavor, you can use homemade chicken broth. If you don't have cooked chicken on hand, you can boil or pan-fry chicken breast and then shred it. Adjust consistency by adding more broth or cream as desired.
