  • 6 cups fresh spinach
  • 2 cups strawberries, hulled and sliced
  • 0.5 cup feta cheese, crumbled
  • 0.5 cup pecans, chopped
  • 0.25 cup red onion, thinly sliced

Dressing Ingredients

  • 0.33 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey (or maple syrup for vegan)
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 1 tsp poppy seeds

Instructions
 

Prepare the Dressing

  • In a small bowl, whisk together all the dressing ingredients: olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, black pepper, and poppy seeds. Whisk until well combined and emulsified.
