  • 1 cup Cooked brown or white rice
  • 0.5 cup Black beans, rinsed and drained
  • 4 oz Grilled chicken or steak, sliced
  • 0.5 cup Fajita veggies (peppers and onions), sautéed
  • 0.25 cup Corn salsa
  • 0.25 cup Pico de gallo
  • 0.25 cup Guacamole
  • 2 tbsp Sour cream or Greek yogurt
  • 0.5 cup Shredded lettuce
  • 0.25 cup Shredded cheese
  • 1 tsp Lime juice
  • Salt and pepper to taste

Instructions
 

Assemble the Bowl

  • Start by placing the cooked rice at the bottom of your bowl.
  • Layer the black beans, grilled protein, and fajita veggies over the rice.
  • Add the corn salsa, pico de gallo, guacamole, sour cream (or Greek yogurt), shredded lettuce, and shredded cheese.
  • Finish with a squeeze of fresh lime juice, and season with salt and pepper to taste.
