  • 8 oz Burrata cheese (225g)
  • 1 pint Cherry tomatoes (about 2 cups)
  • 1/4 cup Fresh basil leaves
  • 2 tbsp Extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C) and slice the ciabatta bread into 1/2-inch thick pieces, then arrange them on a baking sheet.
  • Drizzle the bread slices lightly with olive oil and toast for 5-7 minutes, or until golden brown and crispy.
  • While the bread toasts, halve the cherry tomatoes and roughly tear the fresh basil leaves.
  • Once the bread is toasted, let it cool slightly.
  • Place a generous piece of burrata on each toasted bread slice.
  • Top the burrata with the halved cherry tomatoes and fresh basil.
  • Finish with a drizzle of extra virgin olive oil, a sprinkle of salt, and freshly ground black pepper to taste, then serve immediately.

Notes

For an extra touch, you can rub a garlic clove over the toasted bread before adding the toppings. This recipe is best served immediately after assembly to enjoy the freshest flavors and textures.
