Slaw

  • 4 cups Green cabbage finely shredded
  • 2 cups Red cabbage finely shredded
  • 1 cup Carrots shredded
  • 0.5 cup Red onion thinly sliced

Dressing

  • 0.5 cup Apple cider vinegar
  • 0.25 cup White sugar
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon Celery seeds
  • 0.5 teaspoon Red pepper flakes or more, to taste
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Olive oil

Preparation

  • In a large bowl, combine the shredded green cabbage, red cabbage, shredded carrots, and thinly sliced red onion.
  • In a separate small bowl, whisk together the apple cider vinegar, white sugar, Dijon mustard, celery seeds, red pepper flakes, salt, and black pepper until the sugar is dissolved.
  • Gradually whisk in the olive oil until the dressing is well combined and emulsified.

Combine

  • Pour the dressing over the cabbage mixture and toss well to ensure all ingredients are evenly coated. Serve immediately or chill for at least 30 minutes for flavors to meld.

Notes

For an extra kick, add a pinch more red pepper flakes. This slaw can be stored in an airtight container in the refrigerator for up to 3 days.
