Ingredients
  

For the Salmon

  • 2 fillets salmon fillets
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

For the Avocado Mash

  • 2 avocados, ripe
  • 1 tbsp lime juice
  • 2 tbsp cilantro, chopped
  • 1 tbsp red onion, finely diced
  • 0.25 tsp salt

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  • Pat the salmon fillets dry with a paper towel, then brush them with olive oil and season with salt and pepper.

Baking the Salmon

  • Place the seasoned salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Making the Avocado Mash

  • While the salmon bakes, halve and pit the avocados, then scoop the flesh into a medium bowl and mash with a fork.
  • Stir in the lime juice, chopped cilantro, finely diced red onion, and salt until well combined.

Serving

  • Once the salmon is ready, remove it from the oven and serve immediately with a generous dollop of the fresh avocado mash.

Notes

For extra flavor, you can add a pinch of garlic powder or paprika to the salmon seasoning. Adjust the amount of red onion and cilantro in the avocado mash to your personal preference.
