Bread Dough

  • 3 cups all-purpose flour
  • 2.25 teaspoons active dry yeast
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup warm water (105-115°F)
  • 2 tablespoons olive oil

Garlic Herb Cheese Filling

  • 0.5 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 0.25 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup shredded Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Dough Preparation

  • In a large bowl, dissolve yeast and sugar in warm water, then let it sit for about 5 minutes until foamy.
  • Stir in olive oil, salt, and half of the flour, mixing until combined, then gradually add the remaining flour until a shaggy dough forms.
  • Turn the dough onto a lightly floured surface and knead for 8-10 minutes until it becomes smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Filling Preparation

  • In a medium bowl, combine softened butter, minced garlic, chopped parsley, chopped thyme, mozzarella cheese, Parmesan cheese, salt, and pepper.
  • Mix well until all ingredients are evenly distributed, forming a fragrant and cheesy filling.

Assembly and Baking

  • Punch down the risen dough and divide it into four equal portions, then roll each portion into a 9x13 inch rectangle on a lightly floured surface.
  • Spread an even layer of the garlic herb cheese filling over each dough rectangle, leaving a small border.
  • Roll up each rectangle tightly from the long side, then slice each log lengthwise down the middle, leaving one end attached.
  • Twist the two halves together, keeping the cut sides facing up, and then form each twisted rope into a round loaf, tucking the ends underneath.
  • Place the formed loaves on a baking sheet lined with parchment paper, cover, and let rise for another 20-30 minutes.
  • Preheat oven to 375°F (190°C), then bake the bread for 30-40 minutes, or until golden brown and cooked through.

Notes

For an extra golden crust, brush the top of the bread with an egg wash (1 egg beaten with 1 tablespoon of water) before baking. You can also sprinkle a little extra Parmesan cheese on top for added flavor.
