  • 8 cups chicken broth
  • 2 lbs boneless, skinless chicken breasts
  • 12 oz egg noodles
  • 2 medium carrots peeled and sliced
  • 2 medium celery stalks sliced
  • 1 medium yellow onion chopped
  • 4 cloves garlic cloves minced
  • 2 inches fresh ginger grated
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 3 green onions chopped for garnish
  • 0.25 cup fresh cilantro chopped for garnish
  • 1 lime cut into wedges, for serving

  • In a large pot, combine chicken broth, chicken breasts, carrots, celery, and onion; bring to a boil.
  • Reduce heat, cover, and simmer for 20-25 minutes, or until chicken is cooked through.
  • Remove chicken, shred it using two forks, and set aside.
  • Add egg noodles to the pot and cook according to package directions, about 7-10 minutes.
  • While noodles cook, stir in garlic, ginger, soy sauce, sesame oil, salt, and pepper into the broth.
  • Return shredded chicken to the pot and heat through.
  • Serve hot, garnished with green onions, cilantro, and lime wedges.

Notes

For extra spice, add a pinch of red pepper flakes with the ginger and garlic. This soup can be made ahead of time; store chicken and noodles separately and combine when reheating to prevent noodles from getting soggy.
