Rhubarb Base

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice

Crumble Topping

  • 1.5 cups all-purpose flour
  • 0.5 cup rolled oats
  • 0.75 cup brown sugar, packed
  • 0.5 cup cold butter, cubed
  • 0.5 tsp cinnamon

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine the chopped rhubarb, granulated sugar, flour, and lemon juice, then toss gently to coat evenly.

Crumble Assembly

  • For the topping, combine flour, oats, brown sugar, and cinnamon in a separate bowl.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Spread the rhubarb mixture into the prepared baking dish and evenly sprinkle the crumble topping over it.

Baking

  • Bake for 40-50 minutes, or until the topping is golden brown and the rhubarb is tender.
