Ingredients
  

Beef Filling

  • 1 lb Ground beef
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 8 oz Tomato sauce

Enchilada Assembly

  • 12 Corn tortillas
  • 19 oz can Enchilada sauce
  • 2 cups Shredded cheddar cheese
  • 1 tbsp Olive oil

Cooking

  • Heat olive oil in a large skillet and brown ground beef with chopped onion and minced garlic, then drain excess fat. Stir in chili powder, cumin, salt, pepper, and tomato sauce, simmering for 10 minutes.
  • Preheat your oven to 375°F (190°C) and briefly warm corn tortillas to make them pliable for rolling.
  • Spread a thin layer of enchilada sauce in a baking dish, then fill each tortilla with the beef mixture and a sprinkle of cheese, rolling tightly and placing seam-down in the dish.
  • Pour the remaining enchilada sauce over the rolled enchiladas, top with shredded cheese, and bake for 20-25 minutes until the cheese is melted and bubbly.
  • Allow the enchiladas to rest for a few minutes before serving, optionally garnishing with sour cream, cilantro, or diced avocado.

Notes

Feel free to adjust the spice level to your preference by adding more chili powder or a pinch of cayenne pepper to the beef filling. A good quality sharp cheddar or Monterey Jack cheese will yield the best flavor and melt.
