Preparation

  • Preheat your oven to 400°F (200°C) and slice the zucchini into 1/4-inch thick rounds.
  • In a mixing bowl, toss the zucchini rounds with olive oil, garlic powder, salt, and pepper until evenly coated.
  • Arrange the seasoned zucchini in a single layer on a baking sheet.

Baking

  • Bake for 10 minutes, then remove from the oven and sprinkle with grated Parmesan cheese.
  • Return to the oven and continue baking for another 5-7 minutes, or until the zucchini is tender and the cheese is golden and bubbly.
  • Garnish with fresh parsley if desired, then serve immediately.

Notes

For a crispier texture, make sure the zucchini is thoroughly dry before tossing with olive oil. You can also experiment with other herbs like oregano or basil.
