These salmon patties are quick, easy, and delicious, perfect for a weeknight meal or a casual lunch. They are crispy on the outside and tender on the inside.

Ingredients

  • 14.75 ounces canned salmon
  • 1 large egg
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions
 

Preparation

  • Drain the salmon and remove any bones or skin, then flake it into a medium bowl.
  • Add the egg, breadcrumbs, dill, Dijon mustard, lemon juice, salt, and pepper to the salmon.
  • Mix gently until well combined, being careful not to overmix.
  • Divide the mixture into 7 equal portions and form each portion into a patty, about 1-inch thick.

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Once the oil is hot, carefully place the salmon patties into the skillet.
  • Cook for 4-5 minutes per side, or until golden brown and heated through.
  • Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.

Serving

  • Serve the salmon patties immediately with your favorite dipping sauce or a fresh salad.

Notes

For extra flavor, add a pinch of cayenne pepper to the mixture. Patties can be made ahead of time and reheated in a skillet or oven.
