Ingredients
  

For the Chicken

  • 4 large boneless, skinless chicken breasts
  • 0.5 cup fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

For the Rice

  • 1 cup jasmine rice
  • 2 cups water or chicken broth
  • 0.25 teaspoon salt

For Serving

  • 2 avocados, sliced
  • 2 tablespoons extra fresh cilantro, chopped
  • 2 lime wedges

Instructions
 

Prepare the Chicken

  • Slice the chicken breasts into 1/2-inch thick strips and place them in a medium bowl.
  • Add cilantro, lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper to the chicken.
  • Toss everything together until the chicken is evenly coated; marinate for 15 minutes if time allows.

Cook the Rice

  • While chicken marinates, combine rice, water or broth, and salt in a medium saucepan.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed and rice is tender.

Cook the Chicken

  • Heat a large skillet over medium-high heat. Add the marinated chicken.
  • Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.

Assemble and Serve

  • Fluff the cooked jasmine rice with a fork.
  • Divide the rice among serving plates, top with the zesty cilantro lime chicken, and garnish with sliced avocado, extra cilantro, and lime wedges.

Notes

For extra heat, add a pinch of red pepper flakes to the chicken marinade. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
