  • 2 chicken breast large, around 1.5 lbs total
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs Panko recommended
  • 1/2 cup Parmesan cheese grated, plus extra for topping
  • 1.5 cups marinara sauce
  • 1 cup mozzarella cheese sliced or shredded
  • 2 tbsp olive oil
  • salt and pepper to taste
  • fresh basil for garnish, optional

Preparation

  • Slice chicken breasts horizontally to create thinner cutlets, then season both sides with salt and pepper.
  • Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for breadcrumbs mixed with 1/4 cup grated Parmesan cheese.

Cooking

  • Dredge each chicken cutlet in flour, then dip in the beaten egg, and finally coat thoroughly with the breadcrumb-Parmesan mixture.
  • Heat olive oil in a large skillet over medium-high heat, then cook the breaded chicken for 3-4 minutes per side until golden brown and cooked through.

Assembly and Broiling

  • Transfer the cooked chicken to a baking dish, then top each cutlet with marinara sauce, mozzarella cheese, and the remaining grated Parmesan.
  • Broil for 2-3 minutes or until the cheese is melted and bubbly, then garnish with fresh basil if desired and serve immediately.

Notes

To save even more time, you can use pre-cooked chicken breast or store-bought marinara sauce. Adjust seasoning to your preference.
