  • 1 lb Ground sausage
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 3 medium Potatoes peeled and diced
  • 4 cups Chicken broth
  • 1/2 cup Heavy cream
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tbsp Fresh parsley chopped for garnish

  • In a large pot or Dutch oven, brown the ground sausage over medium heat, breaking it up with a spoon. Drain off any excess fat.
  • Add the diced onion to the pot and cook until softened, about 3-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes, or until the potatoes are tender.
  • Stir in the heavy cream, salt, and black pepper. Heat through for 2-3 minutes, but do not boil.
  • Ladle the soup into bowls and garnish with fresh chopped parsley before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic. You can also substitute part of the potatoes with other root vegetables like carrots or sweet potatoes for added nutrition and color.
